Flour T 55 or T 70 or T 100: Flours are also categorized according to the degree of grinding. Quite simply, when we read flour T 55, it means that from 100 kilos of fruit we produce 55 kilos of flour or, a little more technically, that from 1 grain of wheat we will use 55 of it. The smaller the number, the less bran it contains. The larger the number, for example 70, the higher the bran, to reach T 100, which means that we have ground the whole grain.
